- 1 lb boneless, skinless chicken breasts or thighs
- 8 oz shiitake and cremini mushrooms, sliced
- 4 cups chicken broth
- 4 cloves fresh garlic, minced
- 1 tbsp fresh ginger, minced
- 3 tbsp low-sodium soy sauce
- 1 cup cream (heavy or half-and-half)
- 8 oz ramen or udon noodles
- 2 green onions (scallions), chopped
- 1 tbsp sesame oil
- Fresh herbs (optional, like cilantro or basil)
Instructions
- Slice the chicken into bite-sized pieces and mince the garlic and ginger.
- In a large skillet or pot, heat a splash of sesame oil over medium heat. Add the garlic and ginger; sauté until fragrant, about 1–2 minutes.
- Add the chicken pieces and sauté until golden brown and no longer pink, about 5–7 minutes.
- Toss in the sliced mushrooms and cook until they’ve softened, about 3–4 minutes.
- Pour in the chicken broth and soy sauce. Bring to a gentle simmer and let the flavors meld for about 10 minutes.
- Stir in the cream and simmer gently until the broth thickens slightly.
- Cook the noodles according to package instructions. Once cooked, drain and set aside.
- Add the noodles to the broth mixture, stir well to combine, and serve hot, garnished with chopped scallions and a drizzle of sesame oil.
Notes
For extra flair, consider topping each bowl with a soft-boiled egg or a sprinkle of crushed red pepper for added heat.
