Instructions
- Peel and dice the potatoes into uniform one-inch chunks.
- In a large pot, heat a drizzle of olive oil over medium heat and sauté the chopped onions and minced garlic until fragrant and translucent (about 3-4 minutes).
- Add the diced potatoes and pour in the broth, bringing it to a gentle boil. Once boiling, reduce to a simmer, cover, and cook for 15-20 minutes until potatoes are fork-tender.
- Remove from heat; mash some potatoes in the pot to create a creamy texture while leaving other chunks for heartiness.
- Stir in heavy cream and shredded cheese over low heat until melted and creamy.
- Season with salt, pepper, and any additional herbs. Optionally, add sautéed mushrooms or crispy bacon.
- Serve hot with toppings such as scallions, more cheese, or a swirl of sour cream.
Notes
For a vegan version, substitute with non-dairy milk and cheese. Leftover cooked potatoes or mashed potatoes can be used.
