Instructions

  1. Peel and dice the potatoes into uniform one-inch chunks.
  2. In a large pot, heat a drizzle of olive oil over medium heat and sauté the chopped onions and minced garlic until fragrant and translucent (about 3-4 minutes).
  3. Add the diced potatoes and pour in the broth, bringing it to a gentle boil. Once boiling, reduce to a simmer, cover, and cook for 15-20 minutes until potatoes are fork-tender.
  4. Remove from heat; mash some potatoes in the pot to create a creamy texture while leaving other chunks for heartiness.
  5. Stir in heavy cream and shredded cheese over low heat until melted and creamy.
  6. Season with salt, pepper, and any additional herbs. Optionally, add sautéed mushrooms or crispy bacon.

Notes

For a vegan version, substitute with non-dairy milk and cheese. Leftover cooked potatoes or mashed potatoes can be used.
