Ingredients

- 4 cups fresh broccoli, chopped
- 1 cup sharp cheddar cheese, grated
- 1 cup cream or milk (or alternative)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 tablespoon olive oil or butter
- Salt, to taste
- Pepper, to taste
- Optional garnishes: crispy bacon bits, extra cheese, fresh herbs
Instructions
- Prep your ingredients: Chop the broccoli into small florets and dice the onions and garlic.
- Sauté the onions: In a large stockpot, heat olive oil or butter over medium heat. Sauté diced onions for 4–5 minutes until translucent. Add garlic and sauté for an additional minute.
- Simmer the broccoli: Add broccoli and broth to the pot. Bring to a boil, then reduce heat and let it simmer for 10-15 minutes until broccoli is tender.
- Blend the soup: Use an immersion blender to puree the soup to your desired consistency.
- Add cream and cheese: Lower heat and stir in cream and cheddar cheese until fully melted.
- Season the soup: Taste and season with salt, pepper, and a hint of nutmeg if desired.
- Garnish and serve: Ladle soup into bowls and top with optional garnishes.
Notes
For a lighter version, use oat milk or dairy alternatives. Adjust seasoning as needed.
