Ingredients

  • 4 cups fresh broccoli, chopped
  • 1 cup sharp cheddar cheese, grated
  • 1 cup cream or milk (or alternative)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 tablespoon olive oil or butter
  • Salt, to taste
  • Pepper, to taste
  • Optional garnishes: crispy bacon bits, extra cheese, fresh herbs

Instructions

  1. Prep your ingredients: Chop the broccoli into small florets and dice the onions and garlic.
  2. Sauté the onions: In a large stockpot, heat olive oil or butter over medium heat. Sauté diced onions for 4–5 minutes until translucent. Add garlic and sauté for an additional minute.
  3. Simmer the broccoli: Add broccoli and broth to the pot. Bring to a boil, then reduce heat and let it simmer for 10-15 minutes until broccoli is tender.
  4. Blend the soup: Use an immersion blender to puree the soup to your desired consistency.
  5. Add cream and cheese: Lower heat and stir in cream and cheddar cheese until fully melted.
