Description

A delightful dish that combines the bright tartness of lemon with savory chicken, enriched with the flavors of Romano cheese and sautéed mushrooms.


Ingredients

  • 1 lb Chicken (breast or thighs, boneless)
  • 2 Fresh lemons
  • 1/2 cup Romano cheese, grated
  • 8 oz Mushrooms (cremini or button)
  • 3 cloves Garlic, minced
  • 2 tbsp Fresh herbs (parsley or thyme)
  • 1 cup Chicken broth
  • 2 tbsp Olive oil or butter

Instructions

  1. Pat the chicken dry with paper towels and season both sides generously with salt and pepper.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Once shimmering, add the chicken pieces, cooking until golden brown, about 4-5 minutes on each side. Remove the chicken and set aside.
  3. In the same skillet, add another tablespoon of oil if needed, lower the heat to medium, and sauté the minced garlic and sliced mushrooms until browned and tender, about 5-7 minutes.
  4. Pour in the chicken broth and juice from one lemon, bringing it to a simmer and scraping the fond from the bottom of the skillet.
  5. Return the chicken to the skillet, submerging it in the sauce for about 2-3 minutes.
  6. Sprinkle the grated Romano cheese over the chicken and let it melt into the sauce.
  7. Finish with fresh herbs and serve immediately, garnished with lemon slices and extra cheese if desired.

Notes

Use fresh ingredients for the best flavor. Adjust salt according to taste and keep an eye on the mushrooms to avoid overcooking.
