Instructions
- Pat the chicken thighs dry with a paper towel.
- Melt butter in a large skillet over medium-high heat until foamy.
- Place chicken thighs skin-side down in the skillet, cooking for 6-8 minutes until golden brown.
- Flip the thighs, add minced garlic, and sauté until fragrant.
- Pour in fresh lemon juice and scrape the pan to collect brown bits.
- Reduce heat, cover, and cook for 12-15 more minutes until internal temperature reaches 165°F.
- Add vegetables during the last few cooking minutes if desired.
- Let chicken rest for a few minutes and sprinkle with fresh herbs before serving.
