Ingredients

  • Boneless chicken (breast or thighs)
  • Fresh mushrooms (sautéed)
  • Shredded mozzarella and cheddar cheese
  • Cream cheese
  • Bell peppers, spinach, or broccoli
  • Fresh garlic
  • Fresh or dried thyme and parsley
  • Chicken or vegetable broth
  • Salt and pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté garlic and mushrooms in a skillet over medium heat until softened.
  3. Dice chicken into bite-sized pieces and add to the skillet, cooking until no longer pink.
  4. Stir in cream cheese until fully melted and combined.
  5. Fold in shredded cheese and broth, seasoning with thyme, salt, and pepper.
  6. Mix in sautéed vegetables until well-combined.
  7. Transfer the mixture to a greased baking dish evenly.
  8. Top with additional cheese.
  9. Bake for 25-30 minutes or until the cheese is golden brown and bubbly.
  10. Let cool slightly before serving.
