- 2 cups heavy cream
- 1 cup brewed coffee or espresso
- 4 egg yolks
- 1/2 cup granulated sugar
- 1 teaspoon pure vanilla extract
Instructions
- Preheat your oven to 325°F (160°C).
- In a saucepan, combine heavy cream and brewed coffee over medium heat, warming without boiling.
- In a separate bowl, whisk egg yolks and sugar together until pale and creamy.
- Slowly drizzle the hot coffee mixture into the yolks while whisking continuously.
- Stir in vanilla extract and strain the mixture through a fine sieve.
- Pour the custard evenly into ramekins and place them in a baking dish filled with hot water halfway up the sides.
- Bake for 35-40 minutes until edges are set, and centers jiggle slightly.
- Cool, then refrigerate for at least 4 hours or overnight.
- Before serving, sprinkle a thin layer of sugar on top of each custard and caramelize using a kitchen torch or broiler.
