Ingredients

  • 2 cups heavy cream
  • 1 cup brewed coffee or espresso
  • 4 egg yolks
  • 1/2 cup granulated sugar
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a saucepan, combine heavy cream and brewed coffee over medium heat, warming without boiling.
  3. In a separate bowl, whisk egg yolks and sugar together until pale and creamy.
  4. Slowly drizzle the hot coffee mixture into the yolks while whisking continuously.
  5. Stir in vanilla extract and strain the mixture through a fine sieve.
  6. Pour the custard evenly into ramekins and place them in a baking dish filled with hot water halfway up the sides.
  7. Bake for 35-40 minutes until edges are set, and centers jiggle slightly.
  8. Cool, then refrigerate for at least 4 hours or overnight.
  9. Before serving, sprinkle a thin layer of sugar on top of each custard and caramelize using a kitchen torch or broiler.
