Description

A warm and comforting casserole featuring sweet corn and a rich honey glaze, perfect for family gatherings and holiday dinners.


Ingredients

  • 4 cups corn (fresh, frozen, or canned)
  • 1/2 cup honey
  • 1/4 cup butter, melted
  • 2 large eggs
  • 1 cup milk or cream
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 cloves garlic, minced

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the corn: If using fresh corn, cut the kernels off the cob. If frozen, ensure it’s thawed and drained. For canned corn, drain and rinse well.
  3. Sauté the garlic: In a skillet, melt 3 tablespoons of butter over medium heat and add minced garlic. Sauté until fragrant but not browned, about 1-2 minutes.
  4. Mix the base: In a large mixing bowl, combine the corn, sautéed garlic, honey, remaining melted butter, eggs, milk, salt, and pepper. Stir until well incorporated.
  5. Transfer to a baking dish: Pour the mixture into a greased 9×13 inch casserole dish.
  6. Bake it: Place in the preheated oven and bake for 45-50 minutes, or until golden brown and set in the center.
  7. Cool slightly & serve: Allow it to cool for about 10 minutes before serving.

Notes

For a dairy-free version, use almond milk or coconut cream and vegan butter. You can also add sautéed onions or bell peppers for added flavor.
