Guinness Beef Stew

Description

A hearty and comforting stew made with tender beef and rich Guinness, perfect for chilly evenings.


Ingredients

  • 2 lbs Beef Chuck, cut into 12 inch chunks
  • 1 (14.9 oz) can Guinness Stout
  • 2 Onions, chopped
  • 4 Garlic cloves, minced
  • 4 Carrots, diced
  • 2 Potatoes, diced
  • 4 cups Beef Broth
  • 2 sprigs Fresh Thyme
  • 2 Bay Leaves
  • 2 tbsp Worcestershire Sauce
  • Salt and pepper to taste
  • 1 tbsp Olive Oil

Instructions

  1. Prep your ingredients: cut beef, chop onions, mince garlic, dice carrots and potatoes.
  2. Sear the beef in olive oil over medium-high heat until browned on all sides, about 5-7 minutes; then remove.
  3. Sauté onions until translucent (3-4 minutes), add garlic and sauté until fragrant.
  4. Combine seared beef, carrots, and potatoes in the pot; pour in Guinness and scrape the browned bits.
  5. Add beef broth to cover everything, and toss in thyme and bay leaves; stir and add Worcestershire sauce.
  6. Bring to a boil, then reduce to low heat; cover and simmer for at least 2 hours until beef is tender.
  7. Adjust seasoning and serve hot, ladled into bowls.

Notes

Serve with crusty bread or a side salad for a complete meal. This stew also freezes well for up to three months.
