A hearty and comforting stew made with tender beef and rich Guinness, perfect for chilly evenings.
Ingredients

- 2 lbs Beef Chuck, cut into 1–2 inch chunks
- 1 (14.9 oz) can Guinness Stout
- 2 Onions, chopped
- 4 Garlic cloves, minced
- 4 Carrots, diced
- 2 Potatoes, diced
- 4 cups Beef Broth
- 2 sprigs Fresh Thyme
- 2 Bay Leaves
- 2 tbsp Worcestershire Sauce
- Salt and pepper to taste
- 1 tbsp Olive Oil
Instructions
- Prep your ingredients: cut beef, chop onions, mince garlic, dice carrots and potatoes.
- Sear the beef in olive oil over medium-high heat until browned on all sides, about 5-7 minutes; then remove.
- Sauté onions until translucent (3-4 minutes), add garlic and sauté until fragrant.
- Combine seared beef, carrots, and potatoes in the pot; pour in Guinness and scrape the browned bits.
- Add beef broth to cover everything, and toss in thyme and bay leaves; stir and add Worcestershire sauce.
- Bring to a boil, then reduce to low heat; cover and simmer for at least 2 hours until beef is tender.
- Adjust seasoning and serve hot, ladled into bowls.
Notes
Serve with crusty bread or a side salad for a complete meal. This stew also freezes well for up to three months.
