  • Green food coloring (spinach or spirulina, optional)
  • Pinch of salt

Instructions

  1. In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt.
  2. In another bowl, blend the milk, melted butter, eggs, vanilla extract, and green coloring until well combined.
  3. Pour the wet ingredients into the dry ingredients, gently stirring until just combined.
  4. Preheat a skillet over medium heat and lightly grease it.
  5. Using a ladle, pour pancake batter into the skillet, forming circles about 4 inches in diameter.
  6. Cook until bubbles form on the top, then flip and cook until golden brown on the other side (1-2 minutes per side).
  7. Serve immediately with your choice of toppings.

Notes

For fluffier pancakes, whip egg whites separately and fold them in. Consider using a non-stick skillet for best results.
