Description

Delicious burritos filled with roasted Hatch green chiles, beans, and cheese, perfect for a comforting family meal.


Ingredients

  • 4 Hatch green chiles
  • 4 flour tortillas (or corn for gluten-free)
  • 1 can black beans (drained and rinsed)
  • 1 cup shredded Monterey jack or cheddar cheese
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt, to taste
  • Fresh cilantro, for garnish

Instructions

  1. Roast the Hatch green chiles over an open flame or hot skillet until blistered. Remove skins, seeds, and chop.
  2. In a skillet, heat olive oil and sauté onions until translucent, then add garlic and cook until fragrant.
  3. Mix beans, roasted chiles, onions, cheese, spices, and salt in a large bowl.
  4. Lay a tortilla flat, place filling in the center, fold sides, and roll tightly.
  5. In the skillet, add butter and cook burrito seam-side down until golden, flipping to cook other side.
  6. Serve cut in half with salsa or guacamole.

Notes

For added flavor, consider adding sautéed mushrooms or diced jalapeños. You can also use leftover chicken for more protein.
