Ingredients
Scale
- Boneless chicken breasts or thighs
- 1 cup Greek yogurt
- Juice of 1 lemon
- 3–4 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/4 cup fresh herbs (rosemary, parsley, or thyme)
- Optional spices (paprika, cumin, or chili powder)
Instructions
- Prepare the Chicken: Trim excess fat from boneless chicken and pat dry.
- Make the Marinade: In a bowl, mix Greek yogurt, lemon juice, minced garlic, olive oil, salt, and pepper. Add optional spices as desired.
- Add Fresh Herbs: Stir in chopped fresh herbs until well combined.
- Marinate the Chicken: Coat chicken pieces with the marinade, cover, and refrigerate for 1-2 hours or overnight.
- Cooking Options: For grilling, preheat grill and cook chicken 6-8 minutes per side. For baking, preheat oven to 400°F (200°C) and bake for 25-30 minutes. For sautéing, heat skillet and cook chicken for 5-7 minutes per side.
- Rest and Serve: Let the chicken rest before slicing and serve with quinoa or roasted vegetables.
Notes
Adjust marination time for desired flavor and tenderness; resting after cooking ensures juiciness.
