Instructions
- In a large bowl, combine rolled oats, nut butter, honey (or maple syrup), and flaxseed meal.
- Add vanilla extract and colorful sprinkles, mixing until well combined.
- If the mixture feels too dry, add a teaspoon of nut butter or honey until moist.
- Refrigerate for about 10-15 minutes to firm up the mixture.
- Roll the mixture into bite-sized balls, about the size of a tablespoon.
- Optional: Roll the balls in more sprinkles or shredded coconut for decoration.
- Place energy balls on a parchment-lined baking sheet and refrigerate for another 30 minutes to set.
