Ingredients

  • ½ cup honey or maple syrup
  • 1 tablespoon flaxseed meal
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, combine rolled oats, nut butter, honey (or maple syrup), and flaxseed meal.
  2. Add vanilla extract and colorful sprinkles, mixing until well combined.
  3. If the mixture feels too dry, add a teaspoon of nut butter or honey until moist.
  4. Refrigerate for about 10-15 minutes to firm up the mixture.
  5. Roll the mixture into bite-sized balls, about the size of a tablespoon.
  6. Optional: Roll the balls in more sprinkles or shredded coconut for decoration.
  7. Place energy balls on a parchment-lined baking sheet and refrigerate for another 30 minutes to set.
