Ingredients

- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup sugar
- 2 large eggs
- 1 cup whole milk
- 1/2 cup melted butter
- 1/2 cup Funfetti sprinkles (plus more for topping)
Instructions
- Preheat your oven to 375°F (190°C) and prepare a muffin tin with liners.
- In a large bowl, combine cornmeal, flour, baking powder, sugar, and salt; whisk together.
- In another bowl, whisk the eggs, then add milk and melted butter.
- Pour the wet ingredients into the dry mixture and stir until just combined.
- Gently fold in the Funfetti sprinkles, saving some for the top.
- Spoon the batter into the muffin tin, filling each cup two-thirds full, and sprinkle the remaining sprinkles on top.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool in the tin for a few minutes before transferring to a wire rack to cool completely.
Notes
For a dairy-free version, swap out milk for almond milk and use coconut oil instead of butter.
