Delightful and colorful Funfetti Cornbread Muffins, perfect for any occasion.


Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup melted butter
  • 1/2 cup Funfetti sprinkles (plus more for topping)

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a muffin tin with liners.
  2. In a large bowl, combine cornmeal, flour, baking powder, sugar, and salt; whisk together.
  3. In another bowl, whisk the eggs, then add milk and melted butter.
  4. Pour the wet ingredients into the dry mixture and stir until just combined.
  5. Gently fold in the Funfetti sprinkles, saving some for the top.
  6. Spoon the batter into the muffin tin, filling each cup two-thirds full, and sprinkle the remaining sprinkles on top.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Let cool in the tin for a few minutes before transferring to a wire rack to cool completely.

Notes

For a dairy-free version, swap out milk for almond milk and use coconut oil instead of butter.
