French Onion Beef Stew with Cheesy Bread Topping

Description

A comforting and hearty dish made with tender beef and caramelized onions, topped with gooey cheese on crusty bread.


Ingredients

  • 2 lbs Beef Chuck, cut into cubes
  • 4 large Yellow Onions, sliced
  • 4 cloves Garlic, minced
  • 4 cups Beef Broth
  • 2 sprigs Thyme
  • 2 Bay Leaves
  • 2 Carrots, chopped
  • 2 Celery stalks, chopped
  • 2 cups Gruyère Cheese, grated
  • 1 large Baguette or Sourdough, sliced
  • Olive Oil, for sautéing
  • Salt and Pepper, to taste

Instructions

  1. In a large Dutch oven over medium heat, add olive oil and sauté the sliced onions until golden brown.
  2. Add the beef cubes, seasoning with salt and pepper, and brown on all sides.
  3. Toss in minced garlic, thyme, and bay leaves, stirring until fragrant.
  4. Deglaze with a splash of beef broth, scraping the bottom of the pot.
  5. Add the remaining beef broth, carrots, and celery. Bring to a boil, then reduce to a simmer for 2-3 hours until beef is tender.
  6. While the stew simmers, prepare the cheesy bread by topping sliced bread with grated cheese and baking at 400°F until bubbly and golden.
  7. Ladle the stew into bowls and top with a slice of cheesy bread.
  8. Garnish with fresh parsley if desired and serve.

Notes

Allow the stew to cool completely before storing leftovers. It can be refrigerated for up to 4 days or frozen for up to 3 months.
