- 2 lbs Beef Chuck, cut into cubes
- 4 large Yellow Onions, sliced
- 4 cloves Garlic, minced
- 4 cups Beef Broth
- 2 sprigs Thyme
- 2 Bay Leaves
- 2 Carrots, chopped
- 2 Celery stalks, chopped
- 2 cups Gruyère Cheese, grated
- 1 large Baguette or Sourdough, sliced
- Olive Oil, for sautéing
- Salt and Pepper, to taste
Instructions
- In a large Dutch oven over medium heat, add olive oil and sauté the sliced onions until golden brown.
- Add the beef cubes, seasoning with salt and pepper, and brown on all sides.
- Toss in minced garlic, thyme, and bay leaves, stirring until fragrant.
- Deglaze with a splash of beef broth, scraping the bottom of the pot.
- Add the remaining beef broth, carrots, and celery. Bring to a boil, then reduce to a simmer for 2-3 hours until beef is tender.
- While the stew simmers, prepare the cheesy bread by topping sliced bread with grated cheese and baking at 400°F until bubbly and golden.
- Ladle the stew into bowls and top with a slice of cheesy bread.
- Garnish with fresh parsley if desired and serve.
Notes
Allow the stew to cool completely before storing leftovers. It can be refrigerated for up to 4 days or frozen for up to 3 months.
