- 8 oz dark chocolate (70% cocoa)
- 1/2 cup unsalted butter
- 4 large eggs
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1/4 tsp salt
Instructions
- Preheat your oven to 375°F (190°C). Grease a round cake pan and line the bottom with parchment paper.
- In a heatproof bowl, combine chopped dark chocolate and butter. Melt over a double boiler, stirring until smooth, then set aside to cool slightly.
- In a large bowl, whisk eggs and sugar until light and fluffy.
- Gently fold the cooled chocolate mixture into the egg mixture until combined.
- Sift cocoa powder and salt over the mixture, then gently fold until just combined.
- Pour the batter into the prepared pan and smooth it out.
- Bake for 25-30 minutes until the edges are firm and the center is slightly jiggly.
- Cool in the pan for about 10 minutes, then turn out onto a cooling rack.
- Dust with powdered sugar or cocoa powder before serving.
