Description

A fun and fiery twist on classic mac and cheese, baked into delightful muffins topped with Cheetos Flamin’ Hot chips.


Ingredients

  • 1 cup elbow macaroni
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 1 cup whole milk
  • 4 tablespoons butter, melted
  • 1 cup Cheetos Flamin’ Hot chips, crushed
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • Optional: fresh parsley or chives, for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with muffin liners.
  2. Cook the macaroni in salted boiling water until al dente. Drain and set aside.
  3. In a saucepan, melt butter and stir in milk. Bring to a simmer, then gradually add the shredded cheese until melted and creamy. Mix in garlic powder and black pepper.
  4. In a large bowl, combine the cooked macaroni with the cheese sauce. Mix in the egg to bind the mixture.
  5. Fold crushed Cheetos into the macaroni mixture.
  6. Scoop the mixture into muffin liners, filling them about three-quarters full. Top with whole Cheetos.
  7. Bake for 18-20 minutes or until golden and a toothpick comes out clean.
  8. Cool the muffins for a few minutes before serving.

Notes

These muffins are best enjoyed warm but can also be served at room temperature. Pair with ranch dip or a spicy aioli for extra flavor.
