Ingredients

  • 1 lb fresh salmon fillets, skinless
  • 2 tablespoons butter (or olive oil)
  • 2 medium potatoes, diced
  • 1 leek, thinly sliced
  • 4 cups vegetable or fish broth
  • 1 cup heavy cream (or half-and-half)
  • 1/4 cup fresh dill, chopped
  • Salt and pepper to taste

Instructions

  1. Start by cleaning and chopping your leeks. Slice them thinly and rinse well to remove any grit. Dice your potatoes into bite-sized chunks, and cut your salmon into equal pieces.
  2. In a large pot, melt the butter over medium heat. Add the leeks and sauté for 3-5 minutes.
  3. Add the diced potatoes, stirring well. Pour in the vegetable or fish broth and bring to a gentle simmer.
  4. Once the potatoes are tender, carefully add the salmon pieces. Cook for 5-7 minutes until the salmon is cooked through.
  5. Stir in the heavy cream, and season with salt, pepper, and the fresh dill. Let it bubble gently for another minute or two.
  6. Ladle the soup into bowls, garnish with extra dill, and serve with crusty bread.
