A delightful blend of sweet figs and creamy goat cheese encased in flaky puff pastry, perfect for any gathering.

- 1 sheet of high-quality all-butter puff pastry
- 1–2 cups fresh figs, sliced
- 4 oz creamy goat cheese
- 2 tbsp honey
- Fresh thyme or rosemary, for garnish
- 1 egg, for egg wash
- 1 tbsp water, for egg wash
Instructions
- Thaw the puff pastry in the refrigerator for 6–8 hours or overnight.
- Prepare the figs by rinsing them under cold water, patting dry, and slicing them in half or quarters.
- Preheat the oven to 400°F (200°C).
- Roll out the puff pastry on a lightly floured surface until about ¼ inch thick.
- Cut the pastry into squares (about 4×4 inches) and place them on a lined baking sheet.
- In the center of each pastry square, place a dollop of goat cheese, followed by a few pieces of fig and a drizzle of honey.
- Fold the corners of the pastry squares towards the center and seal well.
- Whisk the egg with water and brush the tops of the pastries.
- Bake for 20–25 minutes or until puffed and golden brown.
- Allow to cool for a few minutes, garnish with fresh herbs, and serve.
Notes
For a savory twist, you can use store-bought caramelized onion spread in place of figs.
