Description
Delightfully warm and fluffy muffins packed with apple and cinnamon, perfect for fall gatherings.
Ingredients
Scale
- 2 cups all-purpose flour
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 2 teaspoons baking powder
- 2 teaspoons ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1/2 cup milk
- 2 cups fresh apples, chopped (such as Granny Smith or Honeycrisp)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
- In a large bowl, mix the dry ingredients: flour, sugars, baking powder, cinnamon, and salt.
- In another bowl, combine the wet ingredients: melted butter, eggs, and milk. Whisk until smooth, then fold in the chopped apples.
- Pour the wet ingredients into the dry mixture. Stir gently until just combined.
- Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full. Optionally, sprinkle brown sugar and cinnamon on top.
- Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
- Let the muffins cool in the tin for about five minutes before transferring them to a wire rack.
Notes
Avoid overmixing the batter to ensure light and fluffy muffins. Use fresh apples for the best flavor.
