  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon

  • 2 large eggs
  • 1/2 cup milk
  • 2 cups fresh apples, chopped (such as Granny Smith or Honeycrisp)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  2. In a large bowl, mix the dry ingredients: flour, sugars, baking powder, cinnamon, and salt.
  3. In another bowl, combine the wet ingredients: melted butter, eggs, and milk. Whisk until smooth, then fold in the chopped apples.
  4. Pour the wet ingredients into the dry mixture. Stir gently until just combined.
  5. Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full. Optionally, sprinkle brown sugar and cinnamon on top.
  6. Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  7. Let the muffins cool in the tin for about five minutes before transferring them to a wire rack.
