Description

A comforting dish filled with creamy ricotta, sautéed spinach, and rich mozzarella, wrapped in tender lasagna noodles, perfect for family gatherings.


Ingredients

  • Lasagna noodles
  • 15 oz Ricotta cheese
  • 2 cups Mozzarella cheese, shredded
  • 2 cups Fresh spinach, chopped
  • 1 Egg
  • 2 cloves Garlic, minced
  • 1 Onion, diced
  • 1 cup Tomato sauce
  • Fresh herbs (Basil, parsley, oregano)

Instructions

  1. Preheat the Oven: Start by preheating your oven to 375°F (190°C).
  2. Prepare the Noodles: Cook lasagna noodles until al dente, drain, and set aside.
  3. Sauté the Garlic and Spinach: Sauté minced garlic and diced onion in olive oil, then add spinach until wilted.
  4. Make the Filling: Combine ricotta, half of the mozzarella, sautéed spinach, and egg in a bowl.
  5. Assemble the Roll-ups: Spread tomato sauce in a baking dish, fill each noodle with filling, roll tightly, and place seam-side down.
  6. Top with Sauce and Cheese: Cover with more tomato sauce and sprinkle remaining mozzarella on top.
  7. Bake: Cover with foil and bake for 30 minutes, remove foil and bake for an additional 15 minutes.
  8. Serve and Enjoy: Cool slightly, garnish with herbs, and serve warm.

Notes

For extra crispy edges, broil for a minute or two at the end. Adjust seasoning to your taste.
