- 15 oz Ricotta cheese
- 2 cups Mozzarella cheese, shredded
- 2 cups Fresh spinach, chopped
- 1 Egg
- 2 cloves Garlic, minced
- 1 Onion, diced
- 1 cup Tomato sauce
- Fresh herbs (Basil, parsley, oregano)
Instructions
- Preheat the Oven: Start by preheating your oven to 375°F (190°C).
- Prepare the Noodles: Cook lasagna noodles until al dente, drain, and set aside.
- Sauté the Garlic and Spinach: Sauté minced garlic and diced onion in olive oil, then add spinach until wilted.
- Make the Filling: Combine ricotta, half of the mozzarella, sautéed spinach, and egg in a bowl.
- Assemble the Roll-ups: Spread tomato sauce in a baking dish, fill each noodle with filling, roll tightly, and place seam-side down.
- Top with Sauce and Cheese: Cover with more tomato sauce and sprinkle remaining mozzarella on top.
- Bake: Cover with foil and bake for 30 minutes, remove foil and bake for an additional 15 minutes.
- Serve and Enjoy: Cool slightly, garnish with herbs, and serve warm.
Notes
For extra crispy edges, broil for a minute or two at the end. Adjust seasoning to your taste.
