  • 2 pounds beef chuck roast, cut into 1-inch cubes
  • 4 cups beef broth
  • 3 medium carrots, sliced
  • 3 medium potatoes, diced
  • 2 stalks celery, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 1 cup red wine or 1 tablespoon vinegar
  • 1 tablespoon flour or cornstarch (for thickening)
  • Salt and pepper to taste
  • 1 tablespoon oil

Instructions

  1. Brown the beef: Season the beef cubes with salt and pepper. Heat oil in a pot over medium-high heat and sear the beef in batches until browned. Remove and set aside.
  2. Sauté the vegetables: In the same pot, add onions and garlic. Sauté until onions are translucent, scraping up any bits from the bottom of the pot.
  3. Combine ingredients: Return the beef to the pot. Add carrots, potatoes, tomato paste, broth, and red wine or vinegar. Stir everything together.
  4. Simmer: Bring to a gentle boil, then reduce heat, cover, and let it simmer for 2 to 3 hours until the meat is tender.
  5. Thicken the stew: Mix flour or cornstarch with cold water to create a slurry. Stir it into the stew and simmer for an additional 10 to 15 minutes until thickened.
  6. Final taste adjustment: Adjust seasoning before serving.
  7. Serve warm: Enjoy with crusty bread.
