- 4 cups beef broth
- 3 medium carrots, sliced
- 3 medium potatoes, diced
- 2 stalks celery, chopped

- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 2 bay leaves
- 1 cup red wine or 1 tablespoon vinegar
- 1 tablespoon flour or cornstarch (for thickening)
- Salt and pepper to taste
- 1 tablespoon oil
Instructions
- Brown the beef: Season the beef cubes with salt and pepper. Heat oil in a pot over medium-high heat and sear the beef in batches until browned. Remove and set aside.
- Sauté the vegetables: In the same pot, add onions and garlic. Sauté until onions are translucent, scraping up any bits from the bottom of the pot.
- Combine ingredients: Return the beef to the pot. Add carrots, potatoes, tomato paste, broth, and red wine or vinegar. Stir everything together.
- Simmer: Bring to a gentle boil, then reduce heat, cover, and let it simmer for 2 to 3 hours until the meat is tender.
- Thicken the stew: Mix flour or cornstarch with cold water to create a slurry. Stir it into the stew and simmer for an additional 10 to 15 minutes until thickened.
- Final taste adjustment: Adjust seasoning before serving.
- Serve warm: Enjoy with crusty bread.
