- 2 pounds russet or Yukon Gold potatoes
- 4 cloves fresh garlic, minced
- ¼ cup olive oil or butter (or a mix of both)
- Fresh herbs (rosemary, thyme, or parsley)
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat your oven to 450°F (230°C).
- Place the potatoes in a pot, cover with cold water, and add salt. Bring to a boil and cook until tender (15-20 minutes).
- Drain the potatoes thoroughly and allow them to dry.
- Arrange the potatoes on a baking sheet and gently smash each potato to about half an inch thick.
- In a small pan, heat olive oil or butter, add minced garlic, and cook until fragrant (about 1 minute). Drizzle over the smashed potatoes.
- Season with salt, pepper, and fresh herbs, then bake for 20-25 minutes or until golden brown and crispy.
- Serve warm and enjoy!
Notes
Ensure to dry the potatoes well after boiling for extra crispiness. Don’t overcrowd the baking sheet.
