Description

Deliciously crispy smashed potatoes infused with roasted garlic, perfect for family gatherings and weeknight meals.


Ingredients

  • 2 pounds russet or Yukon Gold potatoes
  • 4 cloves fresh garlic, minced
  • ¼ cup olive oil or butter (or a mix of both)
  • Fresh herbs (rosemary, thyme, or parsley)
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat your oven to 450°F (230°C).
  2. Place the potatoes in a pot, cover with cold water, and add salt. Bring to a boil and cook until tender (15-20 minutes).
  3. Drain the potatoes thoroughly and allow them to dry.
  4. Arrange the potatoes on a baking sheet and gently smash each potato to about half an inch thick.
  5. In a small pan, heat olive oil or butter, add minced garlic, and cook until fragrant (about 1 minute). Drizzle over the smashed potatoes.
  6. Season with salt, pepper, and fresh herbs, then bake for 20-25 minutes or until golden brown and crispy.
  7. Serve warm and enjoy!

Notes

Ensure to dry the potatoes well after boiling for extra crispiness. Don’t overcrowd the baking sheet.
