- 1 lb ground meat (beef, turkey, or chicken)
- 1 can diced or crushed tomatoes
- 1 can black beans or kidney beans, drained and rinsed
- 1 cup sweet corn
- 1 onion, diced
- 2 cloves garlic, minced
- 4 oz cream cheese or 1 cup heavy cream
- 2 tbsp taco seasoning
- 4 cups vegetable broth (or chicken broth)
- Fresh cilantro or green onions for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Sauté diced onions and minced garlic until softened.
- Add ground meat and cook until browned, breaking it up with a spoon.
- Stir in canned tomatoes, corn, beans, and taco seasoning.
- Gradually add vegetable broth and bring to a gentle boil.
- Reduce to a simmer and mix in cream cheese (or heavy cream) until melted.
- Let soup simmer for 15-20 minutes, stirring occasionally.
- Taste and adjust seasoning as necessary before serving.
- Ladle into bowls and top with cilantro, diced avocado, or cheese. Serve with lime wedges on the side.
Notes
For a thicker soup, let it simmer longer or add a cornstarch water mixture. Avoid overcooking garlic to prevent bitterness.
