Ingredients

  • 1 lb ground meat (beef, turkey, or chicken)
  • 1 can diced or crushed tomatoes
  • 1 can black beans or kidney beans, drained and rinsed
  • 1 cup sweet corn
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 oz cream cheese or 1 cup heavy cream
  • 2 tbsp taco seasoning
  • 4 cups vegetable broth (or chicken broth)
  • Fresh cilantro or green onions for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté diced onions and minced garlic until softened.
  2. Add ground meat and cook until browned, breaking it up with a spoon.
  3. Stir in canned tomatoes, corn, beans, and taco seasoning.
  4. Gradually add vegetable broth and bring to a gentle boil.
  5. Reduce to a simmer and mix in cream cheese (or heavy cream) until melted.
  6. Let soup simmer for 15-20 minutes, stirring occasionally.
  7. Taste and adjust seasoning as necessary before serving.
  8. Ladle into bowls and top with cilantro, diced avocado, or cheese. Serve with lime wedges on the side.

Notes

For a thicker soup, let it simmer longer or add a cornstarch water mixture. Avoid overcooking garlic to prevent bitterness.
