Ingredients

  • 1 cup almond butter
  • 1/2 cup coconut milk
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 cup shredded coconut (unsweetened)
  • Optional: pinch of sea salt or cinnamon

Instructions

  1. In a mixing bowl, combine almond butter, coconut milk, and maple syrup. Stir until smooth.
  2. Mix in vanilla extract and optional flavors (sea salt or cinnamon).
  3. Refrigerate the mixture for 30–60 minutes to firm up.
  4. Form balls, about one inch in diameter.
  5. Roll each ball in shredded coconut until coated.
  6. Place on a parchment-lined baking sheet and refrigerate for 30 minutes to set.
  7. Store in an airtight container for up to a week or freeze for longer storage.

Notes

Using room temperature almond butter makes mixing easier. Customize with favorite nut butters or additional flavors.
