- 4 boneless turkey fillets
- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 tsp fresh thyme, chopped
- 2 tsp fresh rosemary, chopped
- 1 cup cremini mushrooms, chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 cup fresh cranberries
- 1/2 cup sugar
- 1/2 cup water
- 1 tbsp orange juice
- 2 tbsp butter
Instructions
- Preheat the oven and prepare the turkey fillets by rinsing and patting them dry. Season with salt and pepper.
- Combine breadcrumbs, Parmesan, herbs, and olive oil in a bowl; mix until crumbly.
- Sauté garlic in butter, then add mushrooms and cook until golden brown.
- Spread sautéed mushrooms on fillets and press into the breadcrumb mixture.
- Bake on a lined baking sheet at 375°F for about 25 minutes or until the fillets are cooked through and crust is crispy.
- Simmer cranberries with sugar and water for sauce; add orange juice for flavor.
- Plate the turkey with cranberry sauce and serve.
Notes
Allow turkey to rest after baking for juicier results. Adjust the sweetness of the cranberry sauce to taste.
