  • 4 boneless turkey fillets
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 tsp fresh thyme, chopped
  • 2 tsp fresh rosemary, chopped
  • 1 cup cremini mushrooms, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 cup fresh cranberries
  • 1/2 cup sugar
  • 1/2 cup water
  • 1 tbsp orange juice
  • 2 tbsp butter

Instructions

  1. Preheat the oven and prepare the turkey fillets by rinsing and patting them dry. Season with salt and pepper.
  2. Combine breadcrumbs, Parmesan, herbs, and olive oil in a bowl; mix until crumbly.
  3. Sauté garlic in butter, then add mushrooms and cook until golden brown.
  4. Spread sautéed mushrooms on fillets and press into the breadcrumb mixture.
  5. Bake on a lined baking sheet at 375°F for about 25 minutes or until the fillets are cooked through and crust is crispy.
  6. Simmer cranberries with sugar and water for sauce; add orange juice for flavor.
  7. Plate the turkey with cranberry sauce and serve.

Notes

Allow turkey to rest after baking for juicier results. Adjust the sweetness of the cranberry sauce to taste.
