  • 6 fresh croissants, torn into pieces
  • 6 large eggs
  • 1 cup milk or cream
  • 1 cup cheese (cheddar, Gruyere, or feta)
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 1 cup fresh spinach
  • Fresh herbs (parsley, thyme)
  • Salt and pepper to taste
  • Optional: cooked sausage, ham, or crispy bacon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Tear or cut croissants into bite-sized pieces and place them in a greased casserole dish.
  3. In a skillet, sauté diced onions and bell peppers in olive oil until softened, about 5 minutes.
  4. In a large bowl, whisk together eggs, milk or cream, salt, and pepper. Stir in sautéed veggies, herbs, and cheese.
  5. Pour the egg mixture over the croissant pieces in the casserole dish and gently fold to combine.
  6. Let sit for at least 15 minutes, then bake for 30-35 minutes until puffy and golden brown.
  7. Let cool for 5-10 minutes before serving.

Notes

For best results, let the croissants soak in the egg mixture for the recommended time. Cover with foil for the first half of baking to prevent browning too quickly.
