Description

Ingredients

  • 1 lb beef (chuck or stew meat)
  • 4 cups beef broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • Salt to taste
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) black or pinto beans, drained and rinsed
  • 1 bell pepper, diced
  • 1 cup corn (fresh or frozen)
  • Fresh cilantro, chopped (for topping)
  • Tortilla strips (for topping)
  • 1 lime, juiced

Instructions

  1. Prepare your ingredients by dicing onions, bell peppers, and garlic.
  2. In a large sauté pan over medium heat, heat some olive oil and sauté the onions, bell peppers, and garlic until fragrant.
  3. Add the beef chunks to the pan and sear them on all sides for improved flavor.
  4. Transfer the seared beef to the crockpot and add the sautéed vegetables, beans, corn, tomatoes, and spices.
  5. Pour in the beef broth to cover the ingredients and stir well.
  6. Cook on low for 6-8 hours or on high for 3-4 hours.
  7. Once cooked, taste and adjust seasonings as needed, adding lime juice and toppings before serving.

Notes

Serve with tortilla strips, avocado slices, and extra lime for a burst of flavor.
