- 1 lb beef (chuck or stew meat)
- 4 cups beef broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp smoked paprika
- Salt to taste
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) black or pinto beans, drained and rinsed
- 1 bell pepper, diced
- 1 cup corn (fresh or frozen)
- Fresh cilantro, chopped (for topping)
- Tortilla strips (for topping)
- 1 lime, juiced
Instructions
- Prepare your ingredients by dicing onions, bell peppers, and garlic.
- In a large sauté pan over medium heat, heat some olive oil and sauté the onions, bell peppers, and garlic until fragrant.
- Add the beef chunks to the pan and sear them on all sides for improved flavor.
- Transfer the seared beef to the crockpot and add the sautéed vegetables, beans, corn, tomatoes, and spices.
- Pour in the beef broth to cover the ingredients and stir well.
- Cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, taste and adjust seasonings as needed, adding lime juice and toppings before serving.
Notes
Serve with tortilla strips, avocado slices, and extra lime for a burst of flavor.
