  • 1 cup coarse or stone-ground grits
  • 12 tablespoons Cajun seasoning
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 cup diced bell peppers
  • 1 lemon, for garnish
  • Salt and black pepper, to taste
  • Olive oil, for cooking
  • Sliced green onions, for garnish

Instructions

  1. Prepare the Grits: Cook the grits according to package instructions. Stir in butter and season with salt and pepper.
  2. Season the Shrimp: In a bowl, toss the shrimp with Cajun seasoning, salt, and black pepper.
  3. Cook the Vegetables: In a large skillet, sauté diced bell peppers and minced garlic in olive oil until tender.
  4. Fry the Shrimp: Push the vegetables to one side of the skillet and add more oil if needed. Lay the shrimp flat in the skillet and cook for 2-3 minutes per side.
  5. Assemble: In each bowl, scoop a portion of creamy grits and top with sautéed vegetables and crispy shrimp. Finish with a squeeze of fresh lemon.
  6. Garnish: Top with sliced green onions or fresh herbs.

Notes

For a milder dish, adjust the Cajun seasoning to taste. This recipe can also be made with scallops or tofu for variations.
