Instructions

  1. Cook the Pasta: Boil salted water and cook pasta until al dente, about 8 to 10 minutes. Reserve a cup of pasta water before draining.
  2. Prepare the Lobster: Boil whole lobsters until cooked, about 8-10 minutes, then chop into bite-sized pieces.
  3. Sauté the Aromatics: In a skillet, melt butter and sauté minced garlic until fragrant, about 1-2 minutes.
  4. Deglaze with Wine: Add a splash of white wine and let it simmer until reduced by half.
  5. Create the Creamy Sauce: Stir in heavy cream, sun-dried tomatoes, and cheese until melted and thickened.
  6. Add Spinach and Lobster: Toss in spinach and lobster chunks, cooking until spinach wilts.
  7. Mix in Pasta: Add drained pasta to the skillet, tossing to coat evenly. Add reserved pasta water as needed for consistency.
  8. Serve and Garnish: Plate the pasta and finish with fresh herbs, extra cheese, and a drizzle of olive oil.
