Ingredients
- Fresh lobster tails or chunks
- Fettuccine or linguine
- Heavy cream
- Fresh garlic
- Sun-dried tomatoes
- Baby spinach
- Freshly grated Parmesan cheese
- White wine
- Fresh basil or parsley
Instructions
- Cook the Pasta: Boil salted water and cook pasta until al dente, about 8 to 10 minutes. Reserve a cup of pasta water before draining.
- Prepare the Lobster: Boil whole lobsters until cooked, about 8-10 minutes, then chop into bite-sized pieces.
- Sauté the Aromatics: In a skillet, melt butter and sauté minced garlic until fragrant, about 1-2 minutes.
- Deglaze with Wine: Add a splash of white wine and let it simmer until reduced by half.
- Create the Creamy Sauce: Stir in heavy cream, sun-dried tomatoes, and cheese until melted and thickened.
- Add Spinach and Lobster: Toss in spinach and lobster chunks, cooking until spinach wilts.
- Mix in Pasta: Add drained pasta to the skillet, tossing to coat evenly. Add reserved pasta water as needed for consistency.
- Serve and Garnish: Plate the pasta and finish with fresh herbs, extra cheese, and a drizzle of olive oil.
