Description
A comforting and creamy orzo dish with earthy mushrooms and garlic, perfect for busy weeknights.
Ingredients
Scale
- 1 cup orzo pasta
- 2 cups fresh mushrooms (cremini or shiitake), sliced
- 2 cloves garlic, minced
- 2 cups vegetable or chicken broth
- 1 cup heavy cream
- 1/2 cup Parmesan cheese, grated
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh thyme or parsley for garnish
Instructions
- In a large skillet, heat olive oil over medium heat. Add the sliced mushrooms and cook until browned and tender, about 5-7 minutes. Season with salt and pepper, then stir in minced garlic and cook for an additional minute.
- Pour in the orzo and broth, stirring to combine. Bring to a gentle simmer, stirring occasionally to prevent sticking, until the orzo absorbs the broth.
- Once the orzo is al dente, reduce heat and stir in the heavy cream and Parmesan cheese. Mix until well combined and creamy, adding more broth if too thick.
- Garnish with fresh herbs and serve warm, topped with more cheese if desired.
Notes
Allow mushrooms to brown well for best flavor. Stir regularly while cooking for a creamy texture.
