  • Author: joe
  • Total Time: 30 minutes
  • Yield: 4 servings 1x
  • Diet: Vegetarian

Description

A comforting and creamy orzo dish with earthy mushrooms and garlic, perfect for busy weeknights.

Ingredients

Scale
  • 1 cup orzo pasta
  • 2 cups fresh mushrooms (cremini or shiitake), sliced
  • 2 cloves garlic, minced
  • 2 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, grated
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh thyme or parsley for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the sliced mushrooms and cook until browned and tender, about 5-7 minutes. Season with salt and pepper, then stir in minced garlic and cook for an additional minute.
  2. Pour in the orzo and broth, stirring to combine. Bring to a gentle simmer, stirring occasionally to prevent sticking, until the orzo absorbs the broth.
  3. Once the orzo is al dente, reduce heat and stir in the heavy cream and Parmesan cheese. Mix until well combined and creamy, adding more broth if too thick.
  4. Garnish with fresh herbs and serve warm, topped with more cheese if desired.

Notes

Allow mushrooms to brown well for best flavor. Stir regularly while cooking for a creamy texture.
