Description
A delightful blend of creamy orzo, tender shrimp, and vibrant broccoli, perfect for family dinners.
Ingredients
Scale
- 1 cup orzo
- 1 pound shrimp, peeled and deveined
- 2 cups broccoli florets
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1 medium onion, diced
- 2 cups vegetable or chicken broth
- Olive oil for sautéing
- Salt and pepper to taste
- Fresh herbs (parsley, thyme, or dill)
- Juice of 1 lemon
Instructions
- In a large skillet, heat olive oil over medium heat. Add diced onions and minced garlic, cooking until fragrant.
- Add the orzo to the skillet and toast for 1-2 minutes.
- Pour in the broth, bringing it to a gentle simmer. Cook for 10-12 minutes, stirring occasionally.
- When the orzo is al dente, stir in the broccoli florets.
- Add shrimp and cook until pink, about 3-5 minutes. Then pour in the heavy cream.
- Season with salt, pepper, and lemon juice. Adjust flavors to taste.
- Serve hot, garnished with fresh herbs or parmesan cheese if desired.
Notes
Keep an eye on the orzo to prevent clumping. Use high-quality broth for best flavor. Add shrimp at the end to avoid overcooking.
