- 1 cup orzo
- 8 oz fresh mushrooms (cremini, shiitake, or button), sliced
- 3 cloves garlic, minced
- 1 medium onion, diced
- 4 cups vegetable broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tbsp fresh herbs (thyme or parsley), chopped
- Olive oil, for sautéing
- Salt and pepper, to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Sauté diced onion until translucent, about 3-5 minutes.
- Add minced garlic and cook for another minute until fragrant.
- Stir in sliced mushrooms and sauté for about 5 minutes until tender.
- Add orzo and mix well to combine with the aromatics.
- Pour in vegetable broth and bring to a boil. Reduce to a simmer and cook for 10-12 minutes, stirring occasionally.
- Once the orzo is tender, remove from heat and stir in heavy cream and grated cheese, adjusting consistency as needed.
- Fold in fresh herbs and adjust seasoning if necessary. Serve hot.
Notes
For added flavor, finish with a drizzle of truffle oil or a squeeze of lemon juice before serving.
