Description

Ingredients

  • 1 cup orzo
  • 8 oz fresh mushrooms (cremini, shiitake, or button), sliced
  • 3 cloves garlic, minced
  • 1 medium onion, diced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp fresh herbs (thyme or parsley), chopped
  • Olive oil, for sautéing
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté diced onion until translucent, about 3-5 minutes.
  2. Add minced garlic and cook for another minute until fragrant.
  3. Stir in sliced mushrooms and sauté for about 5 minutes until tender.
  4. Add orzo and mix well to combine with the aromatics.
  5. Pour in vegetable broth and bring to a boil. Reduce to a simmer and cook for 10-12 minutes, stirring occasionally.
  6. Once the orzo is tender, remove from heat and stir in heavy cream and grated cheese, adjusting consistency as needed.
  7. Fold in fresh herbs and adjust seasoning if necessary. Serve hot.

Notes

For added flavor, finish with a drizzle of truffle oil or a squeeze of lemon juice before serving.
