Ingredients

  • Ricotta cheese
  • Fresh lemon juice and zest
  • 2 cloves garlic, minced
  • 1 tablespoon extra virgin olive oil
  • Fresh herbs (basil or parsley)
  • Grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Boil water in a large pot and cook pasta according to package instructions until al dente.
  2. In a skillet, heat olive oil over medium heat and sauté minced garlic until fragrant.
  3. Reduce heat, add ricotta cheese, and stir until creamy.
  4. Zest and juice one lemon into the skillet, mixing well.
  5. Reserve a cup of pasta water, then drain pasta.
  6. Combine drained pasta with the ricotta mixture in the skillet, adding reserved pasta water to adjust sauce consistency.
  7. Season with salt, pepper, and additional lemon juice if needed.
  8. Finish with chopped herbs and grated Parmesan. Serve immediately.

Notes

For a unique twist, substitute some lemon juice with white wine. Use crumbled goat cheese or cream cheese instead of ricotta if needed.
