Instructions
- Boil water in a large pot and cook pasta according to package instructions until al dente.
- In a skillet, heat olive oil over medium heat and sauté minced garlic until fragrant.
- Reduce heat, add ricotta cheese, and stir until creamy.
- Zest and juice one lemon into the skillet, mixing well.
- Reserve a cup of pasta water, then drain pasta.
- Combine drained pasta with the ricotta mixture in the skillet, adding reserved pasta water to adjust sauce consistency.
- Season with salt, pepper, and additional lemon juice if needed.
- Finish with chopped herbs and grated Parmesan. Serve immediately.
Notes
For a unique twist, substitute some lemon juice with white wine. Use crumbled goat cheese or cream cheese instead of ricotta if needed.
