Ingredients
- Chicken (breast or thighs)
- Mushrooms (cremini or button)
- Fresh minced garlic
- Sun-dried tomatoes
- Spinach or kale
- Heavy cream or cream cheese
- Parmesan cheese
- Olive oil
- Butter
- Herbs (basil, thyme, or oregano)
Instructions
- In a large skillet, heat a mix of olive oil and butter over medium heat. Season chicken with salt and pepper, then add to the skillet. Cook until golden brown on both sides, about 5-7 minutes per side. Remove and set aside.
- In the same skillet, add more olive oil if necessary, then toss in minced garlic and mushrooms. Sauté until mushrooms are golden brown, about 2-3 minutes.
- Stir in the sun-dried tomatoes and your choice of greens. Cook until the greens are wilted.
- Lower the heat, add the heavy cream or cream cheese, and stir well to combine. Simmer until the sauce thickens slightly.
- Add the chicken back into the skillet, spooning the sauce over it. Continue cooking for an additional 5 minutes.
- Sprinkle in the Parmesan cheese and herbs, stirring until combined. Adjust seasoning as needed.
- Serve warm over pasta, rice, or with a crusty baguette.
