Ingredients

  • Chicken (breast or thighs)
  • Mushrooms (cremini or button)
  • Fresh minced garlic
  • Sun-dried tomatoes
  • Spinach or kale
  • Heavy cream or cream cheese
  • Parmesan cheese
  • Olive oil
  • Butter
  • Herbs (basil, thyme, or oregano)

Instructions

  1. In a large skillet, heat a mix of olive oil and butter over medium heat. Season chicken with salt and pepper, then add to the skillet. Cook until golden brown on both sides, about 5-7 minutes per side. Remove and set aside.
  2. In the same skillet, add more olive oil if necessary, then toss in minced garlic and mushrooms. Sauté until mushrooms are golden brown, about 2-3 minutes.
  3. Stir in the sun-dried tomatoes and your choice of greens. Cook until the greens are wilted.
  4. Lower the heat, add the heavy cream or cream cheese, and stir well to combine. Simmer until the sauce thickens slightly.
  5. Add the chicken back into the skillet, spooning the sauce over it. Continue cooking for an additional 5 minutes.
  6. Sprinkle in the Parmesan cheese and herbs, stirring until combined. Adjust seasoning as needed.
  7. Serve warm over pasta, rice, or with a crusty baguette.
