Ingredients

- 4 cups fresh tomatoes, chopped
- 4–6 cloves garlic, minced
- 12 oz pasta (spaghetti or fettuccine)
- 1 cup heavy cream
- 2 tbsp extra virgin olive oil
- 1/4 cup fresh basil, chopped
- 1/2 cup grated Parmesan cheese
- Salt, to taste
Instructions
- Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain.
- In a large skillet, heat olive oil over medium heat and sauté minced garlic until fragrant, about 1-2 minutes.
- Add chopped tomatoes and a pinch of salt; simmer for 5-7 minutes until tomatoes soften and release juices.
- Stir in heavy cream and let it cook for another 2-3 minutes to blend flavors.
- Add the cooked pasta to the skillet, tossing to coat. Gradually add reserved pasta water until desired creaminess is achieved.
- Fold in fresh basil, plate, and sprinkle with grated Parmesan cheese before serving.
Notes
For a dairy-free version, substitute heavy cream with cashew cream and for a quicker version, use canned tomatoes.
