Description

Ingredients

  • 4 cups fresh tomatoes, chopped
  • 46 cloves garlic, minced
  • 12 oz pasta (spaghetti or fettuccine)
  • 1 cup heavy cream
  • 2 tbsp extra virgin olive oil
  • 1/4 cup fresh basil, chopped
  • 1/2 cup grated Parmesan cheese
  • Salt, to taste

Instructions

  1. Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain.
  2. In a large skillet, heat olive oil over medium heat and sauté minced garlic until fragrant, about 1-2 minutes.
  3. Add chopped tomatoes and a pinch of salt; simmer for 5-7 minutes until tomatoes soften and release juices.
  4. Stir in heavy cream and let it cook for another 2-3 minutes to blend flavors.
  5. Add the cooked pasta to the skillet, tossing to coat. Gradually add reserved pasta water until desired creaminess is achieved.
  6. Fold in fresh basil, plate, and sprinkle with grated Parmesan cheese before serving.

Notes

For a dairy-free version, substitute heavy cream with cashew cream and for a quicker version, use canned tomatoes.
