Ingredients

  • 2 tsp baking powder
  • 2 tbsp sugar
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup fresh orange juice
  • 1 tbsp fresh orange zest
  • 1 cup cranberries (fresh or frozen)
  • Butter or oil for cooking

Instructions

  1. In a large bowl, whisk together flour, baking powder, and sugar.
  2. In another bowl, mix the ricotta, eggs, milk, orange juice, and zest until smooth.
  3. Gently fold the dry ingredients into the wet mixture, being careful not to overmix.
  4. Fold in cranberries evenly.
  5. Preheat a skillet over medium heat and add butter or oil.
  6. Pour batter onto the skillet and cook until bubbles form, then flip and cook until golden brown.
  7. Serve warm with maple syrup and enjoy!

Notes

For added fluffiness, you can whip egg whites separately and fold them into the batter. Let the batter rest for 10-20 minutes for better flavor.
