- 1 cup ricotta cheese
- 1 cup all-purpose flour
- 2 tsp baking powder
- 2 tbsp sugar
- 2 large eggs
- 1 cup whole milk
- 1/2 cup fresh orange juice
- 1 tbsp fresh orange zest
- 1 cup cranberries (fresh or frozen)
- Butter or oil for cooking
Instructions
- In a large bowl, whisk together flour, baking powder, and sugar.
- In another bowl, mix the ricotta, eggs, milk, orange juice, and zest until smooth.
- Gently fold the dry ingredients into the wet mixture, being careful not to overmix.
- Fold in cranberries evenly.
- Preheat a skillet over medium heat and add butter or oil.
- Pour batter onto the skillet and cook until bubbles form, then flip and cook until golden brown.
- Serve warm with maple syrup and enjoy!
Notes
For added fluffiness, you can whip egg whites separately and fold them into the batter. Let the batter rest for 10-20 minutes for better flavor.
