- 1/2 cup unsalted butter (or coconut oil)
- 1/4 cup granulated sugar
- 1 cup fresh cranberries (or thawed frozen cranberries)
- 1/2 cup granulated sugar (for filling)
- 2 large eggs
- 1/2 cup freshly squeezed lemon juice
- 1 tbsp lemon zest
- Powdered sugar (for dusting)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine butter, sugar, and flour. Mix until resembling coarse crumbs, then press into a greased baking dish. Bake for 15 minutes until lightly golden.
- In another bowl, beat together eggs, granulated sugar, lemon juice, and zest until combined, gently folding in cranberries.
- Pour the filling over the pre-baked crust and bake for 20-25 minutes until set.
- Allow to cool completely before slicing and dusting with powdered sugar.
