Description

Deliciously tangy and sweet, these Cranberry Lemon Bars combine a buttery crust with a zesty lemon filling and tart cranberries, perfect for any gathering.


Ingredients

  • 1 cup all-purpose flour (or gluten-free flour blend)
  • 1/2 cup unsalted butter (or coconut oil)
  • 1/4 cup granulated sugar
  • 1 cup fresh cranberries (or thawed frozen cranberries)
  • 1/2 cup granulated sugar (for filling)
  • 2 large eggs
  • 1/2 cup freshly squeezed lemon juice
  • 1 tbsp lemon zest
  • Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine butter, sugar, and flour. Mix until resembling coarse crumbs, then press into a greased baking dish. Bake for 15 minutes until lightly golden.
  3. In another bowl, beat together eggs, granulated sugar, lemon juice, and zest until combined, gently folding in cranberries.
  4. Pour the filling over the pre-baked crust and bake for 20-25 minutes until set.
  5. Allow to cool completely before slicing and dusting with powdered sugar.

Notes

For best results, avoid overmixing the filling and allow the bars to cool completely for cleaner cuts.
