- 2 cups fresh (or frozen) cranberries
- ½ cup granulated sugar
- 1 cup all-purpose flour
- ½ cup granulated sugar
- A pinch of salt
- ½ cup cold unsalted butter
- 1 egg
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
- In a small saucepan over medium heat, combine cranberries and ½ cup of sugar. Cook until the cranberries begin to pop and release their juices, about 5 to 7 minutes. Remove from heat and set aside.
- In a large bowl, mix flour, ½ cup of sugar, and a pinch of salt. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the egg and vanilla extract until well combined.
- Press half of the crumb mixture into the prepared pan to form a firm crust. Spread the cranberry mixture evenly over this crust.
- Crumble the remaining dough over the cranberry layer, covering it evenly.
- Bake for 30-35 minutes until golden brown. Allow to cool completely before slicing into squares.
Notes
For a variation, you can substitute cranberries with raspberries or blueberries.
