Description

Deliciously tart and sweet Cranberry Crumb Bars, perfect for gatherings and cozy afternoons.


Ingredients

  • 2 cups fresh (or frozen) cranberries
  • ½ cup granulated sugar
  • 1 cup all-purpose flour
  • ½ cup granulated sugar
  • A pinch of salt
  • ½ cup cold unsalted butter
  • 1 egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
  2. In a small saucepan over medium heat, combine cranberries and ½ cup of sugar. Cook until the cranberries begin to pop and release their juices, about 5 to 7 minutes. Remove from heat and set aside.
  3. In a large bowl, mix flour, ½ cup of sugar, and a pinch of salt. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the egg and vanilla extract until well combined.
  4. Press half of the crumb mixture into the prepared pan to form a firm crust. Spread the cranberry mixture evenly over this crust.
  5. Crumble the remaining dough over the cranberry layer, covering it evenly.
  6. Bake for 30-35 minutes until golden brown. Allow to cool completely before slicing into squares.

Notes

For a variation, you can substitute cranberries with raspberries or blueberries.
