  • 2 large eggs
  • 1/2 cup melted butter (or softened)
  • 1/3 cup honey (for batter)
  • 1/2 cup softened butter (for frosting)
  • 1/2 cup honey (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a mixing bowl, whisk together the cornmeal, flour, baking powder, and salt.
  3. In another bowl, combine the milk, eggs, melted butter, and honey.
  4. Mix the wet ingredients into the dry ingredients until just combined.
  5. Fill cupcake liners about two-thirds full and bake for 15-20 minutes, or until a toothpick comes out clean.
  6. While cooling, prepare the honey butter frosting by whipping together softened butter and honey.
  7. Once cooled, frost each cupcake generously with the frosting.

Notes
