Instructions
- In a large mixing bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, cinnamon, and salt.
- In a separate bowl, mix the wet ingredients: buttermilk, egg, and vanilla extract; whisk until smooth.
- Combine the wet mixture with the dry ingredients, stirring gently until just combined; some lumps are okay.
- Preheat a non-stick skillet or griddle over medium heat, adding butter or oil as needed.
- Ladle about ¼ cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface (around 2-3 minutes), then flip and cook for another 2 minutes until golden brown.
- Keep pancakes warm in a low-temperature oven while you finish the batch.
- Serve hot with maple syrup, fresh fruit, or whipped cream.
Notes
Let the batter rest for about 5 minutes before cooking for fluffier pancakes. Use room temperature ingredients for the best texture.
