- 1/2 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup powdered sugar for rolling
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt. Set aside.
- In a large mixing bowl, beat the softened butter with granulated sugar until creamy and light (about 2-3 minutes).
- Add eggs one at a time, mixing well after each addition, then blend in the vanilla extract.
- Gradually combine the dry ingredients with the wet mixture until fully blended, but do not over-mix.
- Cover the dough with plastic wrap and refrigerate for at least 30 minutes.
- Scoop out tablespoon-sized portions of dough, roll into balls, and coat in powdered sugar.
- Place on baking sheets and bake for 10-12 minutes or until edges are set, and the centers look slightly undercooked.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For a lighter option, substitute butter with plant-based butter. You can also add almond or peppermint extract for extra flavor.
