- 1 cup high-quality dark or semi-sweet chocolate
- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 1/2 cup heavy cream
- Flaky sea salt, for topping
Instructions
- Prepare your molds: Line a muffin pan with cupcake liners or silicone molds.
- Melt the chocolate: In a heatproof bowl over simmering water, melt the chocolate gently, stirring frequently until smooth.
- Create the chocolate shells: Spoon melted chocolate into the prepared molds, leaving a small well in the center. Chill in the fridge for about 15 minutes to set.
- Prepare the caramel: In a saucepan over medium heat, combine the butter and sugar. Stir until melted and bubbly, then carefully add the heavy cream, stirring continuously. Cook for another 5-7 minutes until slightly thickened.
- Fill the shells: Pour the caramel into each chocolate shell, filling them about three-quarters of the way full.
- Seal with more chocolate: Drizzle the remaining melted chocolate over the filled cups to seal them. Chill again for about 20 minutes until firm.
- Finish with salt: Sprinkle flaky sea salt over each cup before the chocolate sets completely.
- Enjoy! Once set, gently peel away the liners and indulge.
