Ingredients

  • 1 cup Unsweetened Cocoa Powder
  • 1 ½ cups Granulated Sugar
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • ½ tsp Salt
  • ½ cup Unsalted Butter, room temperature
  • 2 large Eggs
  • 1 cup Buttermilk
  • 2 tsp Vanilla Extract
  • Optional Toppings: Whipped Cream, Crushed Peppermint, Sprinkles, Mint Leaves

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line your cupcake tin with festive cupcake liners.
  3. In a large bowl, combine flour, cocoa powder, baking powder, baking soda, and salt. Whisk until fully mixed.
  4. Cream the butter and sugar together in another bowl until fluffy and pale.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Alternately add the dry mixture and buttermilk to the butter mixture, blending until just combined.
  7. Scoop the batter into the cupcake liners, filling them about two-thirds full.
  8. Bake for about 18-20 minutes or until a toothpick comes out clean.
  9. Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
  10. Frost with chocolate ganache or whipped cream and decorate with festive toppings.

Notes

For added flavor, try including peppermint extract or orange zest in the batter.
