- 1 cup Unsweetened Cocoa Powder
- 1 ½ cups Granulated Sugar
- 1 tsp Baking Powder
- 1 tsp Baking Soda

- ½ cup Unsalted Butter, room temperature
- 2 large Eggs
- 1 cup Buttermilk
- 2 tsp Vanilla Extract
- Optional Toppings: Whipped Cream, Crushed Peppermint, Sprinkles, Mint Leaves
Instructions
- Preheat your oven to 350°F (175°C).
- Line your cupcake tin with festive cupcake liners.
- In a large bowl, combine flour, cocoa powder, baking powder, baking soda, and salt. Whisk until fully mixed.
- Cream the butter and sugar together in another bowl until fluffy and pale.
- Add the eggs one at a time, mixing well after each addition.
- Alternately add the dry mixture and buttermilk to the butter mixture, blending until just combined.
- Scoop the batter into the cupcake liners, filling them about two-thirds full.
- Bake for about 18-20 minutes or until a toothpick comes out clean.
- Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
- Frost with chocolate ganache or whipped cream and decorate with festive toppings.
Notes
For added flavor, try including peppermint extract or orange zest in the batter.
