Description

Delightfully warm cookies combining rich chocolate and crunchy pistachios for a unique twist on a classic treat.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 3/4 cup roughly chopped pistachios

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add eggs one at a time and then stir in vanilla extract.
  4. In another bowl, whisk together flour, baking soda, baking powder, and salt.
  5. Gradually incorporate the dry mixture into the wet ingredients.
  6. Stir in chocolate chips and chopped pistachios.
  7. Drop dollops of dough onto the baking sheet, leaving space between each cookie.
  8. Bake for 10-12 minutes until edges are golden.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For a vegan version, substitute butter with coconut oil and eggs with flaxseed meal mixed with water.
