Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup cold unsalted butter, cubed
  • 1 beaten egg
  • ½ cup heavy cream
  • 1 cup strong brewed coffee
  • ½ cup chocolate chips
  • Optional: vanilla extract, almond extract, nuts (e.g. pecans or walnuts)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line your baking sheet with parchment paper.
  3. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  4. Add the cold butter and blend until the mixture resembles coarse crumbs.
  5. In a separate bowl, combine the beaten egg, heavy cream, and brewed coffee.
  6. Pour the wet ingredients into the dry mixture and fold gently.
  7. Add the chocolate chips and fold them in.
  8. Turn the dough onto a floured surface and shape into a circle about 1-inch thick.
  9. Cut the dough into 8 equal wedges and transfer to a baking sheet.
  10. Brush the tops with heavy cream.
  11. Bake for 15-18 minutes or until golden brown.
  12. Let cool slightly before serving.

Notes

Feel free to experiment with different chocolate types or add nuts for extra crunch.
