- 4 chicken thighs (or breasts)
- 1 cup all-purpose flour (or gluten-free flour)
- 2 eggs
- 1/2 cup milk (or buttermilk)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika (optional)
- Salt and pepper to taste
- 1/4 tsp cayenne pepper (optional)
- Oil for frying (peanut oil recommended)
Instructions
- Rinse and pat dry the chicken. Season both sides with salt, pepper, and chosen spices.
- Set up a dredging station with flour in one bowl, beaten eggs mixed with milk in another, and seasoned flour in a third.
- Dip each piece of chicken in flour, then egg mixture, and coat again in seasoned flour.
- Heat oil in a deep skillet over medium-high heat, ensuring it’s hot enough.
- Fry chicken for 5-7 minutes per side until golden brown and cooked to an internal temperature of 165°F.
- Let chicken rest on a wire rack to maintain crispiness. Optionally, prepare gravy with drippings.
Notes
For extra flavor, allow chicken to rest after frying. Ensure oil temperature is right to avoid greasy chicken.
