Description

A vibrant and nutritious Chicken Cabbage Stir-Fry that combines tender chicken, crisp cabbage, and a medley of vegetables for a delightful meal.


Ingredients

  • 1 lb boneless chicken (breast or thighs), sliced
  • 4 cups cabbage (green, red, or Napa), chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 1 cup bell peppers, sliced
  • 1 cup mushrooms (shiitake, button, or oyster), sliced
  • 3 tbsp soy sauce (low-sodium or tamari)
  • 2 tbsp olive or sesame oil
  • Fresh herbs (basil or cilantro) for garnish

Instructions

  1. Heat the oil in a large skillet or wok over medium-high heat.
  2. Add sliced chicken and stir frequently until no longer pink. Season with salt and pepper.
  3. Toss in the minced garlic and ginger. Cook for one minute.
  4. Add bell peppers and mushrooms. Stir continuously for two minutes until slightly softened.
  5. Fold in the cabbage and pour in the soy sauce. Increase heat to wilt the cabbage while keeping some crunch.
  6. Once everything is combined, remove from heat and add fresh herbs on top before serving.

Notes

Serve hot over jasmine rice, quinoa, or noodles. Pairs well with cucumber salad or steamed dumplings.
