- 12 jumbo pasta shells
- 2 cups cooked chicken, shredded
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 2 cloves garlic, minced
- 1 tablespoon fresh basil, chopped
- 1 tablespoon fresh parsley, chopped
- 1 cup Alfredo sauce
- 1 cup mushrooms, sautéed (optional)
- Salt and pepper to taste
Instructions
- Cook the jumbo shells according to the package instructions until al dente.
- In a large bowl, combine shredded chicken, ricotta cheese, sautéed mushrooms, mozzarella, garlic, and fresh herbs. Season with salt and pepper; mix well.
- For homemade Alfredo sauce, melt butter in a saucepan, add minced garlic, and stir until fragrant. Gradually whisk in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese until melted and creamy.
- Preheat the oven to 350°F (175°C). Spread a thin layer of Alfredo sauce in a baking dish.
- Fill each shell with the chicken mixture and place them in the dish, open side up.
- Pour remaining Alfredo sauce over the filled shells and sprinkle with extra mozzarella.
- Cover with foil and bake for about 30 minutes. Remove foil and bake for an additional 15 minutes until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving. Enjoy with a green salad or garlic bread!
Notes
Let the dish rest a bit after cooking to meld flavors. You can add spinach to the filling for added nutrition.
