- 8 oz Cream Cheese
- 1 cup Powdered Sugar
- 1 cup Cherries, fresh or jarred
Instructions
- Preheat your oven to 350°F (175°C).
- Line a jelly roll pan (15×10 inches) with parchment paper and lightly grease it.
- Beat together eggs and granulated sugar until thick and pale. Add vanilla, baking powder, and flour, folding gently until combined.
- Pour batter into the pan and bake for 12-15 minutes until lightly golden.
- Cool the cake in the pan for 10 minutes, then roll it in a powdered sugar-dusted kitchen towel and let it cool completely.
- Beat together cream cheese, powdered sugar, and a splash of vanilla until smooth.
- Unroll the cake, spread the cheesecake filling evenly, and sprinkle cherries on top.
- Roll the cake back up without the towel, wrap tightly in plastic wrap, and refrigerate for at least 1 hour.
- Unwrap, dust with powdered sugar, and slice to serve.
