Description

A delightful blend of soft sponge cake, rich cream cheese filling, and tart cherries, perfect for any gathering.

Ingredients

Scale
  • 4 large Eggs
  • 1 cup Granulated Sugar
  • 1 teaspoon Vanilla Extract
  • 1 cup All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 8 oz Cream Cheese
  • 1 cup Powdered Sugar
  • 1 cup Cherries, fresh or jarred

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a jelly roll pan (15×10 inches) with parchment paper and lightly grease it.
  3. Beat together eggs and granulated sugar until thick and pale. Add vanilla, baking powder, and flour, folding gently until combined.
  4. Pour batter into the pan and bake for 12-15 minutes until lightly golden.
  5. Cool the cake in the pan for 10 minutes, then roll it in a powdered sugar-dusted kitchen towel and let it cool completely.
  6. Beat together cream cheese, powdered sugar, and a splash of vanilla until smooth.
  7. Unroll the cake, spread the cheesecake filling evenly, and sprinkle cherries on top.
  8. Roll the cake back up without the towel, wrap tightly in plastic wrap, and refrigerate for at least 1 hour.
  9. Unwrap, dust with powdered sugar, and slice to serve.

Notes

Ensure the cake cools adequately before rolling to prevent cracking.
